4 Chicken breast fillets, diced
1 onion, finely chopped
8 tbsp passata with onions and garlic
330ml can diet coke
4 tbsp tomato puree
1 tbsp dark soy sauce
2 tsp Worcestershire sauce
2 garlic cloves, finely chopped
200ml chicken stock
1 tsp dried mixed herbs
200g sugar snap peas
1 red and 1 yellow pepper cut into pieces

In a large pan sprayed with Frylight, add the chicken and onion and stir fry until lightly browned. Add the diet coke, stock, passata, tomato puree, garlic, Worcestershire sauce, soy sauce, and the mixed herbs and stir, Bring to the boil, reduce heat cover and simmer for 15mins.

Add the sugar snap peas and peppers and increase the heat back to medium-high. Cook for another 15mins until the sauce thickens. Serve with rice or you could serve with wedges.
