This is an adapted recipe from here ~ KFC Fakeaway I thought making it with mini chicken breast fillets would be much easier for me.
Technically SW would class this as a tweak, however due to the fact the full recipe calls for less couscous than you would make if you were having it as a meal I do not syn it.
Free on Extra Easy (or if wanting to syn couscous then 4 syns for full recipe)
350g skinless mini chicken breast fillets
80g plain couscous
1/4 tsp mustard powder
1 tsp celery salt
1 tsp cayenne pepper
1 tsp ground cumin
Chicken stock cube
1 medium egg
Add the mustard powder, cumin, cayenne pepper and chicken stock cube to the couscous and add enough boiling water to cover, cover with a plate and leave until the couscous absorbs the water.
Meanwhile turn your oven on to heat to 200c, line a baking tray and spray with fry light.
Once the water has been absorbed, mix your egg into the couscous mixture. Dip your chicken breast fillets to coat them and place on the tray.
Place in oven and cook for 20-25mins
Serve with spicy potato wedges ~ one that is so easy and always turn out gorgeous is this one from swjunkie and corn.
Tastes just as good as the real thing!
